I think this was a counterfeit book. Looked like bound Xerox copies of pages from a book. Pictures were very poor quality -and black and white. Who wants black and white pictures of food?! Top it off the recipes in the index were not even alphabetized correctly within each letter. Returning it and alerting the publisher.
We've had our sous vide cooker for about a month and I love it. Meat cookery in sous vide is a game changer. It's everything I hoped it would be and more. But most of the current recipes I've found are basic and not very creative. This book is entirely different.There is a wide range of styles - I can't wait to try most everything. Sous vide makes these things possible because temperature control is no longer a matter of hyper-vigilance, and cooking in stages produces better end results. For example, the fish AND the potatoes in the fish and chips are cooked sous vide (separately) prior to frying. Doing this reduces the moisture content of the ingredients so the fish doesn't steam up the batter, clings better and fries up crisp and delicious. The potatoes have that Belgian perfection of twice frying but you eliminate one of the frying steps. I've done a variation of this by precooking chicken (not sous vide, but I'll try it next time) before frying it, you cook the coating, not the chicken, so you don't have to mess with ensuring the chicken is actually cooked before the crunchy exterior is burnt.The instructions are clear and the photos are gorgeous. I love this book!
This is a great sous vide cookbook, and the author's passion is obvious. It have 500+ recipes, is a well thought out introduction to all the possibilities of sous vide cooking - and exposes you to everything you can apply the technique to. The explanations ahead of each section are helpful and the book builds on the recipes so you can see why for those it makes sense to cook sous vide as opposed to standard methods, and I felt it gave me a good understanding of what sous vide makes sense to use for the most (very long time slow cooking or low-temperature cooking) and how to modify other standard recipes to take advantages of the method. The included recipes are not complicated (the beauty of sous vide itself is that it makes cooking most ingredients very straight forward) - the hardest parts of any of them will be the steps you need to do away from the sous vide part. The directions are very thorough and easy to follow and there is a lot of detail on how to do most of the work ahead of time. There is also good explanation as to why you use a certain temperature and how changing times and temperatures affects the cooking process. I have cooked a fair number of the proteins in the book, some of the veggies, eggs and also attempted the cocktails and desserts - and everything has come out excellent. While i like that it is a somewhat ambitious cookbook that tries to challenge a more experienced cook as well, the explanations are excellent so if you have any interest in cooking and are able to follow a recipe this should not be too hard to follow.
lots of obvious editing errors. the recipes were not bad, but not impressed by the book. Several recipes were repeated. Not a great effort.
First off, I like the cover but not the look of the inside with black and white pictures.I have only skimmed the book so far and I have found ingredients ommited from the list but appearing in the steps. Also, some of the wording can be hard to follow especially considering that the actual step by step part of the recipes is very brief.Some of the recipes look awesome, and I can’t wait to try some.
There are about 550 incredible recipes. This is really very convenient, because I do not need to think what dish to cook. Recipes contain simple ingredients, it will not be difficult to follow the instructions. It is good that there is information about the content of calories, sugar, carbohydrates, and so on in each recipe. chocolate pudding and chicken I cooked simply. I like this Sous Vide cookbook.
